As I've mentioned, I have 54cm Hunq, my PBH is 85cm, and I am 175cm tall.
Saddle height (center of BB to top of saddle) is 75cm.

The stem has an effect horizontal extension of 6 or 7 centimeters, and I 
feel comfortable with them.
At first I had Dirt Drop 10cm stem; it made me feel a bit too stretched.

I like handlebar to be high, which makes stem stick out pretty high, which 
in my opinion is not very cool-looking.
I could have gone for 58cm frame, but then handlebar would have been too 
far away.
Maybe you can find a stem with even shorter extension (5cm), but currently 
there is no such stem in Riv website.

I like to ride bolt upright when on Bosco- or Alba- equipped bike, so again 
stem is sticking out high.

You can set this bar pretty high without showing much stem.

I ride mostly on paved roads, sometimes unpaved roads.
There are not many rideable trails around here (in Japan, "trail" usually 
means something like this 
<https://www.flickr.com/photos/77318553@N08/8740525489/in/photostream/>, or 
something even worse), so I don't have have many chances to ride on trails.

Anyway, you can ride wherever you like on your Hunq with whichever 
handlebar you have.
When I found rideable trail on my way, both Bullmoose and Albatross bars 
worked fine.
