One way you can handle the daruma nut problem is to use a recessed brake nut instead of the usual nut. You can put the spacers on the outside of the nut, and the rim on the recessed nut will save you a few mm. You will need to enlarge the hole in the fender carefully... But I have done this and it works. I believe that Campy-style seatpost binder bolts also use the same threading, so if you have one of those around, it could also be used.
