Thanks for the ideas, gents!

How could I have missed that VO saddle? That's pretty much exactly what I was 
asking about. 

The security bolt idea is a good one, too.  

The more I think about it, I may try the "ball bearing in beeswax"/ poor man's 
security bolt approach at first.*  I haven't adjusted the thing since I dialed 
it in anyway.  If the saddle gets snatched, c'est la vie.  And I can replace it 
with VO model if it does take a walk. The 15 year old, perfectly broken in B17 
special that was stolen (with the bike- this Trek is its replacement...) was a 
kick in the gut.  At this point, its replacement is just money.

* (The thought process was thus:  Security bolt is a great idea.  Except I 
don't want to have to carry around extra wrenches. Wait a minute, I have never 
adjusted those once in five years.  Why the heck do I need to do that?  Might 
as well just make them too annoying for any thief to want to meddle with.)
