My suggestion is to go sometime other than the dead of winter.  Bike 
rentals are plentiful but my wife was not game for riding on slush, snow 
and ice this trip.  We hope to go back at a warmer time and rent bikes the 
whole time (many hotels have bike rentals or a shop very close where you 
can rent).  The one thing you can't rent were the Pedersens they sell at 
Christiania Cycles (http://www.pedersen-bike.dk/).  Funky place in a very 
funky part of town. 

As for the gears under those handlebars, I'm not totally sure but I believe 
one operated the rear derailleur and the other the brakes.  One part of the 
lever was for upshifting and the other for downshifting with your thumb 
(kind of like brifters).  I think it was a 1x5 set up.  The components were 
older Campy that had been polished out to a mirror shine.  Can't recall for 
sure but I believe the brakes were operated with the right hand levers.
