Gorgeous bike, Eric.  Congratulations!

With your love of narrow bars, I think drops could work for you -- if you
get them in the correct position for your body.  Have you tried drop bars
up high?  A Tallux stem would allow you to place the tops above the
saddle.  And the higher you go, the closer the bars get.
