I'll chime in on the brake issue.  Blasphemy, I know, but the cantilevers 
that came on my Atlantis ('03) were just barely kinda sorta OK in the dry 
with no load.  They were totally inadequate otherwise.  After much futzing 
about I got the Tektro 720s when Rivendell started carrying them.  While a 
bit better, they were still nothing like a good brake, especially with any 
load.  Just for laughs (and in desperation) I tried a cheap Shimano V-brake 
& voila!  Real stopping power at last.  

Caveat:  Standard V-brakes with at least 100 mm arms need long cable pull 
levers.  Mini Vs (under IIRC about 95 mm arms) can use short pull levers.  
Mini Vs have some limitation on tire size.  My wife's 26" wheeled Atlantis 
has TRP 8.4 brakes with lots of clearance over 1.5" tires, and they may 
clear 2", never tried.  

Vs also have the advantage of luggage clearance for touring or bike 
packing, and less cable futzing than cantis (no straddle wire issues).  The 
TRPs are a bit spendy but the generic Shimanos on my bike were around $30 
each.  If you have non-aero levers, they're probably standard pull so would 
require a mini-V.
