I highly recommend the Washington edition of the Cycling Sojourner books for a good overview of options, as there are so many for riding out of Seattle that time of year. The Olympic peninsula and San Juan islands are both good places to start looking at route planning. Ferries leaving west out of Seattle will get you headed in the direction of the peninsula and Port Townsend is a nice day ride from Bainbridge.
