Oh gee, since I'm talkin' pie in the sky.....an Alba steel bar if you don't mind it being 55 instead of 56. I was going to say a Choco bar if you don't need the rise of an Alba and don't mind it being 54cm. My third choice would be the B356 bar from Blue Lug in Japan. I have Alba in 55 and 56 and the difference is notable in not just width but the curve. Since the 56 Alba steel is not made anymore when I saw the B356 I thought it just may be great, and it's steel which I prefer as I can run bar end brake levers with those and have all that hand room !
For the stem, I am not a fan of "7" negative rise stems with bars you want high, so considering that I would look at the VO steel quill one that has a +17 degree rise in lengths up to 12cm.
