Ash, I want to second what Erl mentioned about Blue Lug-- they have a plethora of black Nitto parts, and they are very easy to deal with. Once I ordered some bars on a Friday afternoon, and they were there on Tuesday morning! (From Tokyo!)

I would recommend a King 2Nut headset, or a Cane Creek 110. Presumably you're going to be riding this bike for a while.... Finally, yes, go with the Open Bar! They are super comfy with lots of hand positions.
