I have 3 hats for different temps. One is an Alpaca hat with earflaps thinnish. Very warm. 2nd is Ibex Coppi Merino cycling cap with ear flaps. 3rd is a fleece lined nylon running cap again with ear flaps. Key is that my Nutcase helmet has the spindial to easily adjust to various thickknesses. Alternatively you can get some knot ear covers that button onto your helmet straps and line with fleece and wear a beanie.
