Conservation of energy, baby. The dyno is converting rotational energy (or 
angular kinetic energy) of the spinning wheel into electrical energy. And 
then your headlight is turning the electrical energy into light.

Hook up a battery in place of the headlight, and you've got a regenerative 
brake.
