Leah: Go fancy. In fact for a frame that pretty, there is no such thing as too fancy.
Also, when I initially had Honjos on my Soma, I had 700c seven though my wheels were 650bs. The aluminum was pliable enough to bend to fit the wheels and didn't look off. That may be an option for you to explore. I will see if I can find some pictures.
