I think that I first combined sage green and red some 15 years ago or so with that 2003 Curt Goodrich custom Riv Road in sage green with cream accents after I had scored a pair of as-new but second hand set of Ortlieb panniers in red; IIRC these were the classic rears made from woven synthetic fabric, which I later traded for the Back Rollers in the photo.
The combination seemed to me both a striking contrast of colors and a harmonious combination, and I've kept it ever since.
