Eric, my man, have you tried slowing down? 

Jokes aside, I'm not sure how helpful I can be - I don't really find 
sweating in winter a big problem, and our winters are a lot more mild than 
yours to boot. I do find that I need to ditch the wind/rain resistant layer 
as soon as I'm warmed up, provided it's not needed for rain and/or wind. I 
ride in wool exclusively and find it does a good job of being warm 
regardless, as well as wicking reasonably well - but this is the same as 
any Rivendell rider pretty much.
