My numbers for bike setup are all in line with yours (83 PBH, 72cm saddle height), and I feel exactly the same about the aesthetics of a “French fit” vs. going smaller and having too much seatpost. I think you’re going to more than ok with a 54 Sam. That’s what I ended up with.
