Choices. They are wonderful but come with the cost of having to decide. Lucky for you that all the choices sound like winners.
Regarding the 55cm/700c Hilsen, I agree that they are available, Keven at Riv offered it as an anternative to the 54cm/650b, which i choose instead. I suspect the 55cm would be better in a dry climate where mudguards are not required, 700c with mudguards would almost certainly introduce toe overlap. As for the Hislen vs. Sam. Based on your intended use, either would be excellent, as would many much lesser bikes. It sounds like emotion will drive your decision more than reason.
