Part of the argument for having multiple strings is for redundancy. If smaller interconnect cables are used, they will likely not have the required ampacity and OCPD to support the full load. In the event of part of the bank needing to be pulled offline there will be downtime and expense associated with upgrading the smaller interconnect cables to support the full load or the proportionally increased load.
