Dan:

In addition to all the excellent answers already given,

Ruby is a scripting language run via an interpreter.
RB compiles to a binary executable.

These are not small differences when you look at your means of  
distribution, pricing, sales
and licensing of a finished application.

In summary, RB vs Ruby depends mostly on your intended audience and how
you want to reach them.      If your interface is the Web, then Ruby  
has many
depths to explore that RB does not.    If you are intending to  
distribute/license
a double-clickable application, then RB makes more sense, particularly
if you want to distribute the app across more than one platform.

Just my thoughts.
