It depends entirely on what hardware you're using. I can tell you  
now, it may not be worth writing your own software as there are some  
outstanding solutions out there. GeoVision makes a capture card that  
takes security camera inputs and records the video in your choice of  
resolutions and formats, including Mpeg4 and H264. The feature set is  
incredible, such as motion-sensitive recording and unattended object  
alarms. The card includes the GeoVision Multicam app.

This is, of course, Windows only but it may be worth looking into. I  
use this stuff for my store's security systems and couldn't be

If you really want to try it, I would recommend an IP camera from  
SuperCircuits. They're not the cheapest, and especially expensive  
with motorized PTZ (pan, tilt, zoom) but they're likely your best

cameras, and stick with standard cameras which connect over BNC. This  
one is my personal favorite - excellent quality and features for

can vouch on they're quality.

But be warned, very very little of security stuff is designed for Mac  
OS X. It's all Windows or set-top boxes. I wish there were more OS X- 
compatible options, but there just aren't.
