Creamed Chopped Beef
White Sauce
3 Tbsp unsalted butter
3 Tbsp all-purpose flour
1/2 tsp. dry mustard powder
Pepper to taste (Black pepper for this recipe, white pepper for recipes like
maccaroni and cheese)
2 1/2 cups milk, warmed (Can use whole milk, half and half, light cream or a
combination to equal 2 1/2 cups)
Melt the butter in a frying pan or saucepan over medium heat. Whisk until
smoth. Add the mustard powder and pepper then start adding the warm milk a
little at a time whisking constantly. Whisk until smooth then bring to a boil
over medium heat. When the sauce comes to a boil, boil 1 minute or until
desired thickness.
1-2 jars dried beef Rinse the beef under cold water and pat dry. Shread the
meat.
Add to the sauce and heat. Serve over toast, waffles or biscuits.
This sauce can also be used to make sausage gravy, a favorite here in the
South. Just brown sausage, drain well and mix into the white sauce. The sauce
is also good to add cheese, stir and melt then add to pasta and bake. Jan
