Luby Hawiian Pie Ingredients: 1/3 C. Butter 1 1/2 C. Sugar 3 Eggs 2 Tbsp. Flour 2 Tbsp. Cornmeal 1 1/4 C. drained, canned, crushed Pineapple 1 1/4 C. Coconut 1 tsp. Vanilla 1 unbaked 9-inch Pie Shell Preparation: Heat oven to 350 degrees. In medium bowl, beat together butter, sugar, eggs, flour, and cornmeal until well blended. Add pineapple, coconut, and vanilla. Mix well. Pour into pie shell. Bake 45 minutes or until wooden pick insterted in center comes out almost clean.
