Joanie's Hominy and Bacon Skillet

1/2 lb. bacon, diced and sautéed
1/2 cup onion, finely diced
1 can (29 oz.) hominy, rinsed and drained well
Salt and ground black pepper, to taste

Sauté bacon in a large skillet until nicely browned. Add hominy, onion, salt and
pepper and saute until nice a hot.  Serve with fried eggs and toast if desired.
