BROCCOLI - CORN SUCCOTASH

  1 lb. fresh broccoli
  4 c. water
  1 (1 lb.) can cream style corn
2   Eggs
  3 slices whole wheat bread
  1/2 tsp. salt
  1/4 tsp. pepper
  2 tbsp. butter, melted

Cook broccoli in water 6 to 7 minutes on HIGH. Drain well.
Toast bread. In a 3-quart glass casserole, combine broccoli, corn, eggs,
2 slices cubed toast, salt and pepper. Crush 1 toast slice and sprinkle
over top. Drizzle with melted butter. Microwave on HIGH 6 to 8 minutes,
rotating 1/4 turn halfway through cooking. Rest, covered, 5 minutes
before serving. Serves 6 to 8.
