Oatmeal Crisp Cookies
1 cup brown sugar 1 cup white sugar, plus extra for rolling balls in 1 cup shortening 2 eggs, beaten 1 teaspoon vanilla 2 cups flour 1/2 teaspoon salt 1 teaspoon soda 1 teaspoon baking powder 1-1/2 cup oatmeal Preheat oven to 350 degrees F. Sift together the flour, salt, soda and baking powder. In a bowl beat the eggs and vanilla together. In a separate bowl, beat the butter and sugars until light and creamy (either by hand or mixer). While beating the butter, slowly add in the egg mixture. Gently fold dry ingredients, including oats into creamed mixture. Roll into balls, then roll balls in extra white sugar to coat. Place balls on lightly greased baking sheets, leaving about 2 inches between the cookies. Bake on upper rack of oven for 12 to 15 minutes, or until lightly browned.
