CHEDDAR TURKEY EGG NOODLE CASSEROLE

 

6 oz.                 Wide egg noodles

 

3-4                   Pancetta slices, chopped (Italian bacon,

regular or Canadian may be substituted)

 

1 lb.                 Turkey ground

 

½ lb.                Mushrooms

 

2-3                   Onions, chopped

 

½ teaspoon .                  Pepper

 

2 teaspoon           Thyme

 

½ c.                 White wine

 

½ c.                 Chicken stock

 

½ c.                 Sour cream

 

¼ teaspoon                  Nutmeg

 

8 oz.                 Cheddar, shredded

 

3-4 Table sppon              Crumbs, toasted in butter

 

Saute bacon till browned & crisp; remove.  Saute onions and

mushrooms; remove to bowl.  Saute turkey; add onions, mushrooms,

pepper, thyme; add wine; deglaze pan; add stock & bring to

bubble; stir in sour cream slowly; add nutmeg.  Combine noodles

w/turkey in greased casserole; top w/cheese and crumbs around

edges of casserole; broil till cheese has melted & browned.
