Blackberry Jam Cake Cake: 4 eggs 1 cup butter 3 cups flour 1 teaspoon baking powder 1-1/2 cups sugar 1 cup buttermilk 1 teaspoon baking soda 1 cup blackberry jam 1 cup pecans, chopped 1/2 cup dark raisins 1 teaspoon each - ground cloves, cinnamon, nutmeg Frosting: 2 cups buttermilk 2 cups sugar 1/2 cup butter 1 cup ground dark raisins 1-2 cups pecans, chopped 1-2 cups coconut (optional) Cake Preparation: 1. Sift spices, baking powder, and flour together. 2. Dissolve soda in buttermilk. 3. Add eggs, butter, and jam. Mix well. 4. Add pecans and raisins. Mix thoroughly. 5. Stir in flour, one cup at a time until well mixed. 6. Pour into 3 - 9 inch cake pans. 7. Bake at 350 degrees for 30-45 minutes. Frosting Preparation: 1. Combine buttermilk and sugar. Cook on medium high about 20 minutes or until thick. 2. Remove from heat and add butter. Mix until well combined. 3. Add pecans and raisins and mix well. 4. Frost quickly.
