Like I said, don't have your fire real high, and wait a good three minutes
and gently slide the end of your spatula under the edge of the pancake, it
should feel firm when you lift it up, and if so, shove it all the way under,
and flip! then about one to one and one half more minutes, and voila, you
got it!
If you turn the first side too soon, it comes like a clump of mushy dough, a
real mess.
