Chinese Fried Rice
2 egg whites
1 egg
3/4 tsp grated ginger root
1/4 cup chopped fresh mushrooms
1/4 cup finely shredded carrots
2 Tbsp chopped fresh chives
1 1/2 cups cooked rice, well chilled 
1 Tbsp soy sauce
Beat egg and egg whites. lightly spray skillet with non stick spray.
Heat skillet over med heat. Pour in eggs. Cook, without stirring, until
the eggs begin to set. The cook and stir until the eggs are crumbly and
broken into small bits. Transfer eggs to bowl and set aside. Slightly
cool skillet, then spray again with non stick spray. heat over med high
heat, add ginger and cook for 30 seconds. Add mushrooms, carrots, and
chives. Cook and stir about 3 mines. Stir in rice and eggs. Sprinkle
with soy sauce. Cook for 3-5 minutes until heated. 

Happiness comes through doors you didn't even know you left open.
