Baked Salmon Fish Sticks Servings: 4 Source: "Cooking with The Diabetic Chef" Ingredients 1 C yellow corn meal 1 tsp black pepper 1 tsp garlic powder 1 lb salmon, skinless and cut into 2-inch slices 1 C- LF (1%) milk Nonstick cooking spray Preheat oven to 375 degrees F. Combine cornmeal, black pepper, and garlic powder. Dip salmon pieces in the milk, then dredge them in the corn meal mixture until thoroughly coated. Spray a baking sheet with nonstick cooking spray, then arrange the salmon sticks on it. Bake for 25-30 minutes, or until the sticks break apart with ease.
