Hometown Buffet Chocolate Pudding Cake
1 cup flour 1/2 cup sugar 2 tablespoons unsweetened dry cocoa 2 teaspoons Baking Powder 1/2 teaspoon salt 1/2 cup milk 2 tablespoons oil 2 teaspoon vanilla 1-1/2 cups boiling water . In large mixing bowl combine 1-cup flour, 1/2-cup sugar, 2 tablespoons unsweetened dry cocoa, 2 teaspoons baking powder, 1/2 teaspoon salt and set aside. Mix together separately 1/2-cup milk, 2 tablespoons oil, 1-teaspoon vanilla and with mixer on medium-high beat liquid into dry ingredients, beating 3 minutes or till smooth. Spread batter evenly in bottom of an ungreased 9"square baking pan. Set aside while you combine 3/4-cup sugar and 1/4-cup unsweetened dry cocoa gradually stirring in 1 1/2-cups boiling water till it's smooth. Pour carefully over batter in pan but do NOT stir it at all! Bake at 350°F. about 30 minutes or till tester inserted in middle comes out clean. While warm you can spoon it into dessert dishes as you do when you're at The Buffet. Serves 9 nicely.
