ST. PATRICK'S DAY CAKE 
1 box white cake mix 
1 tsp. pure peppermint 
4-5 drops green food coloring 
1 jar fudge ice cream topping 
1 cup chopped nuts 
TOPPING: 
1 1/2 tsp. pure peppermint 
1 small tub cool whip 
2-3 drops green food coloring 
Preheat oven according to box directions. Prepare pan as directed on
box. Mix cake mix according to directions, add pure peppermint. Add
enough green food coloring to tint a light green. Bake cake as per pkg.
directions. When cake is done, still hot, spread fudge ice cream topping
over top. Sprinkle with nuts. Cool completely. Mix pure peppermint, cool
whip green food coloring, enough for light green tint. Spread over cake,
refrigerate.
