Copha is vegetable shortening made of solidified coconut oil. The product is 
used in cookies and other desserts. While infrequently used in the US it is 
quite popular in Australia.


Copha can be used in any recipe that calls for shortening. In most recipes, 
shortening can be substituted for butter. So, copha can be used in just about 
any recipe that calls for butter or shortening (deep-frying, pie crusts, 
biscuits, etc.)


However, coconut oil is one of the WORST oils you can eat--has one of the 
highest saturated fat contents.
