Pepper Burgers
 
1 pound ground beef
1 chipotle pepper in adobe sauce finely chopped
3  fresh jalapeno peppers finely chopped
3 cloves garlic minced
101/2  teaspoons Creole seasoning
1/2 small red onion finely chopped
1/4 teaspoon  salt
1/2 teaspoon freshly ground black pepper
5 tablespoons  mayonnaise
4 poppy seed hamburger buns
Combine mayonnaise and chopped  chipotle pepper in a small bowl and mix 
with a fork.
Combine beef with  remaining ingredients and mix well then allow to rest 3 
hours in  refrigerator.
Shape beef mixture into 4 patties and grill 4 minutes per  side.
Serve on toasted buns with pepper mayonnaise spread underneath and on  top 
of each patty.
