Country Chicken and Potato Bake ~ Serves 6

3 medium potatoes,  unpeeled, cut in cubes
1 medium onion, chopped
3-lbs. chicken pieces
1  tsp. rosemary leaves, dried (or several sprogs fresh.)
ΒΌ tsp. pepper
1  tsp. salt

Preheat oven to 425.
Grease a baking dish or spray with  non-stick spray.
Mix all ingredients together in large bowl or plastic  bag.
Arrange in baking dish and bake one hour or until potatoes
are done  and juices run clear when chicken is pierced.
