Applesauce Cake 1 stick unsalted butter, softened but still firm 1 c. sugar 1 c. unsweetened applesauce 1/2 tsp cloves 1/2 tsp cinnamon 1/2 tsp nutmeg 1/2 tsp allspice 1/2 tsp salt 1 tsp baking soda 2 tbsp hot water 2 c. all-purpose flour 1/2 c. raisins
Heat oven to dg350. Grease an 8- or 9-inch loaf pan with butter. With electric mixer beat butter and sugar until light, creamy and fluffy. About 1 minute on medium speed, 3 minutes on high. Meanwhile, heat applesauce in small saucepan. Add spices and salt to applesauce. Stir to combine. Mix baking soda with 2 tablespoons hot water and stir in to applesauce-spice mixture. Add applesauce mixture to creamed butter/sugar; stir to mix. Whisk together flour and raisins. Stir into batter until well blended. Pour into greased loaf pan. Bake 45 minutes. Start checking after 35 minutes. The top should spring back when pressed with the flat side of a fork. Remove from oven. Cool in pan on rack for 5 minutes.
