CHICKEN PIE CREOLE

 

1 ( 5 pound) stewing chicken (cut up)

 

SAUCE:

2 TBSP Butter (melted)

4 TBSP Flour

3 cups Chicken stock

1 cup light cream

Salt

Pepper

 

CRUST:

2 cups sifted Flour

4 tsp baking powder

2 TBSP melted Butter

1 egg (beaten)

3/4 to 1 cup Milk

 

Simmer chicken until tender. Remove meat from bones and arrange

in a baking dish.

 

SAUCE: blend together melted butter and flour. Gradually add to

warmed chicken stock. Then add cream, salt and pepper. Stirring,

bring to a boil. Pour 3 cups over the chicken.

 

CRUST;

Sift together the flour, baking powder and salt. Add milk,

stirring quickly to make a soft dough. Drop by spoon fulls over

chicken mixture and sauce. Bake at 425 degrees for 15 to 20

minutes...
