PEACHES & CREAM CHEESECAKE

 

3/4 cup flour

3 Tbs. butter

1 tsp. baking powder

1 egg

1/2 tsp. salt

1/2 cup milk

1 (3¼ oz.) pkg. vanilla pudding. Do not use instant

1 (15-20 oz.) can sliced peaches

8 oz. cream cheese, softened

1/2 cup sugar

1/2 tsp. cinnamon

1 Tbs. sugar

 

Grease the bottom and sides of a 9" pie plate. Combine the first

7 ingredients. Beat 2 minutes with an electric mixer at medium

speed. Pour into pie plate. Drain peaches, reserving the juice.

Arrange peaches over the top of the batter. Combine cream cheese,

½ cup sugar and 3 tablespoons of peach juice. Beat 2 minutes with

an electric mixer at medium speed. Spoon over batter Leaving 1"

around the edge. Combine cinnamon and remaining sugar and

sprinkle over top. Bake at 350° for 30-35 minutes until browned.

Chill until firm.
