We have successfully Installed RED5 on a bluequartz Server

We made a startup script to run it but is there a healthy signal to send it
to stop,

We would like to integrate red5 into a package for distribution and create
necesarry scripts to run on a Bluequartz / Centos 4 systems.

Should we send a regular sighup signal to stop the java application ?

Also , logs arent showing on 0.41 should they be turned on, could find an
option for that.

What would be the process

Yep, and that's because John is clearing the pending mails regularly :)
