I am wondering which OS is everyone getting the best results on with the later versions of Red5 ( .5 rc1, final, trunk) ?

These later versions are frustratingly buggy under windows, leaving me with an impression that most testing was done on non-Windows based machines (probably Linux)? The final release was deemed worthy enough of the 'stable' label but from experience, red5 running on Windows XP/2K/2003 Server is far from stable.. rc5, final and trunk all suffer from the exact same problems under Windows.

any error messages? Tracebacks? Anything? A simple "does not run" will
help nothing in fixing your problems...

Which leaves me to wonder exactly what OS does the core team test red5 on?

I develop on Windows 2000 and XP, had no real problems so far. We use
Red5 (semi-)productive on Debian and Ubuntu here at the office.

Does red5 perform better under Fedora?

Network servers like Red5 usually perform better on any Linux platform
than on Windows.
