Yep... I was looking at the .flv files though and not the .as files.... 
actually just found the .as files and changing what I want should be a snap.

Changing the flash application answers both your questions,
you can set the quality there, and hardcode the rtmp address
this will require some actionscript knowledge, I suggest you hire someone...

its a few hours task for who knows it.
all those demos have the source there.. if you feel like doing yourself.. xD
