If you're on RedHat 8 it will now be:

rpmbuild --rebuild package.src.rpm  [--target=<target platform>]

Ok, I know, it's been discussed.
But I'm an idiot, and ignored the thread when it was around, and now I 
can't find it.

So, would someone please refresh me on this.
I need to rebuild a .src.rpm

Used to be trivial:  rpm --rebuild <name>.src.rpm

But some kind person(s) decided that must have been to easy, and it 
doesn't work any more. How is it done now? (yes, I'm cranky about this. 
It worked fine, why was it messed with?)..
