So, put 8.0 and all your custom stuff on the backup, and swap roles.
(Backup becomes primary, primary becomes backup.)  Then, once it
appears to be working, backup to the new backup box once again.  If
the backup isn't suited to being the server (underpowered?) then swap
the roles back again at this point.

Requires some time, but keeps you pretty safe.
