/sbin is no longer in your path as a regular user (even when you su to root). I can offer these suggestions:

   a) get used to typing /sbin/service
   b) add /sbin/ to your PATH (I wouldn't)

Also instead of su-ing to root, adjust your /etc/sudoers file to allow your regular user account to run certain commands under sudo.
