Well, you could make fstab entries for the fs's in question, then it 
would only be a matter of accessing the computer via ssh, vnc, or some 
other method. If you read 'man mount', there should be an option that 
mounts all fs's of a certain type (not sure if that's exactly what 
you're looking for, but hopefully it's a start).
