Are we talking about Mac OS X? If so it has a BSD core and includes NFS. Thus, I would mount the Mac's HD from my Linux server and use tar to get all it's data.

Alternatively, you can export a directory on your Linux server and tar from the Mac to the Linux box. However, the BSD tar isn't as good as the GNU/Linux tar. It might go faster thought since you can compress that data before you send it over the network.
