Michael, We currently use Sendmail for the MTA, Squirrelmail for the web interface, and Webmin/usermin to allow domain owners complete control over their users and mailboxes. Right now I we're up to almost 200 domains. Works like a champ.
Don't forget to throw MailScanner, SpamAssassin and ClamAV into the mix to provide a complete email solution.
