Ultimately, I want all traffic going out on eth0. If I read you correctly, all traffic should route through eth0. Check /etc/sysconfig/network-scripts/ifcfg-eth1. Make sure there is no GATEWAY line. If there is comment it out or delete it, otherwise that route will continue to come back. To delete that route manually, try route del default dev eth1
