kudzu is started where all the other services are started. If your
default runlevel is 3, then kudzu is started in the boot process by a
symbolic link in /etc/rc.d/rc3.d/ (it should be called S95kudzu) which
points to a script at /etc/rc.d/init.d/kudzu. If your default runlevel
is 5, then the link would be in /etc/rc.d/rc5.d/ 

Editing which services start or are killed on which runlevels can be
accomplished with several GUI tools or by changing the links in those
directories directly. Probably, the easiest way for you to try
disabling kudzu is to become root, then type 'setup' as below

[root@localhost /root]# setup

at the prompt. Select the option, System services, use the cursor keys
to get to kudzu and hit the spacebar to remove the asterisk. Next time
you reboot kudzu should not start.

I don't know if that is a standard Red Hat thing. I use the pcmcia-cs
packages without any special Red Hat modifications.
