Securing and Optimizing Linux: RedHat Edition has a chapter on OpenSSH
installation. Available at your favourite LDP mirror or at www.openna.com.
Provides recommended config files (for server and client), with
explanations. Includes some basic info on some of the included utilities.
The guide makes a good starting point to securing your Linux box.

Caveats: 
-It is is RHL 6.1/6.2 specific, but the info can be easily modified to 7.0
(mostly just need to adapt the inetd info to xinetd). 
-It recommends compiling from source. If you prefer RPMs, install the latest
OpenSSL rpms from RedHat then install the latest RPMs from www.openssh.com
(these follow the RH convention and are newer than the latest RedHat
packages).
