I suggest that you review Courier MTA. One package provides you with integrated SMTP, POP, and IMAP service (plus webmail and calendar if you want em).
You can use LDAP, MySQL, PostgreSQL, or db files for your user/auth info if you like. This might prove easier than stitching together a bunch of buzzword protocols yourself.
